Teriyaki: Behind the Sauce<\/strong><\/h2>\n

Okay, but where does the name come from? \u200b\u200bThe word teriyaki is derived from the noun teri (\u7167\u308a), which refers to the shine or luster created by the sugar content (\u30bf\u30ec), and yaki (\u713c\u304d), which refers to the cooking method of grilling or broiling. Traditional teriyaki cooking involves brushing or dipping the ingredients in the sauce several times while it\u2019s cooking. So, whether you\u2019re glazing some salmon with a simple sauce of soy, mirin, and sugar or grilling tofu and vegetables with a more complex sauce like the one in this recipe, you\u2019re still teriyaki-ing.
