Not-the-Everyday Italian Salad

This recipe takes the Everyday Italian salad kit and cranks up the Italian feel of Il Belpaese (the Home Country). We’ll be adding sliced salami, cherry tomatoes, and fresh banana peppers to this crisp, fresh salad. It’s perfect for serving with Italian favorites like chicken parmesan, shrimp fra diavolo, or linguine alfredo. But let’s stick to the fresh veggie part of what will certainly be an amazing meal!

You’ll be starting with the Everyday Italian Salad kit, which contains crisp iceberg lettuce, roasted sunflower seeds, red cabbage, shredded carrots, parmesan and cheddar croutons, and Italian herb seasoning, all topped with a zesty cheesy Italian vinaigrette dressing. Layer on the added ingredients and enjoy!

Ingredients

  • 1 package Everyday Italian Salad Kit
  • Salami Slices
  • 1 cup cherry tomatoes- sliced
  • Banana Peppers

Directions

  1. Slice the tomatoes and get the salami and banana peppers out.
  2. Assemble the salad kit and top with salami, banana peppers and tomatoes.

No one says you have to stop here. If you’re looking to up the Italian quotient even more (or just use up some fresh ingredients in your fridge), here are some ideas: 

  • Go Antipasto
    This recipe is halfway there. To add even more classic antipasto elements, you can also toss in chopped artichokes, sliced red peppers, marinated mushrooms, sun-dried tomatoes, or yes, even more cured meats.
  • Add Garden Favorites
    An Italian salad can handle all sorts of garden goodies, so pile on the sliced cucumber, sliced radishes, red onion, larger tomatoes like heirloom tomatoes, or chopped herbs like basil and cilantro.
  • Add chilled pasta
    Toss in a cup of cooked (and chilled) farfalle pasta to make this salad into a satisfying lunchtime meal.
