Shrimp Stir Fry with Noodles and Vegetables

Ingredients

  • Ginger Soy Meal Kit
  • 1 pound wild-caught shrimp
  • 1 tbsp avocado oil, divided
  • 3 green onions + extra to garnish, chopped
  • 2 tbsp lime juice
  • 1/2 tsp paprika
  • salt & pepper

Directions

  1. Pat dry the shrimp. Season with paprika, salt and pepper.
  2. Preheat a large pan and add avocado oil. Cook 3 minutes on one side, flip and cook additional 2-3 minutes until cooked through. Stir in chopped green onions and lime juice. Transfer to a plate.
  3. Add remaining oil to the same. Add veggies and saute for 3-4 minutes.
  4. Meanwhile, pierce the pouch with noodles and heat in microwave for 45 seconds to one minute. Remove noodles from the pouch and add to the pan with veggies. Toss noodles using kitchen tongs.
  5. Add in cooked shrimp and the sauce. Toss to combine. Garnish with chopped green onions if desired.
