Mexican Street Corn Burger Sliders

When we say these sliders have gone south, we mean it in the best way possible. Sliders are a crowd favourite, but sometimes they need a flavour boost. We gave them a Southwestern twist by adding our Mexican Street Corn Chopped Salad Kit to the stack. Pile them high with sliced avocado, red onion, grilled jalapeños, tomatoes, and the bold, creamy components from the salad kit. The result? Absolutely delicious!

Ingredients

  • 1 Taylor Farms Mexican Street Corn Chopped Salad Kit
  • 6 slider buns
  • 6 small burger patties (beef, chicken, or plant-based)
  • 6 slices of cheese (cheddar or your choice)
  • 2 avocados, sliced
  • 2 fresh jalapeño peppers
  • 1 large tomato, sliced
  • 1 red onion, thinly sliced
  • Smoky paprika cornbread crumbles & crispy corn (from the salad kit toppings)
  • Creamy elote dressing (from the salad kit)
  • Olive oil or cooking spray
  • Salt and pepper, to taste

Directions

  1. Corn Chopped Salad Kit and separate the greens, toppings, and dressing. Toss the greens with half the dressing (save the rest for later).
  2. Grill the Jalapeños: Slice in half and remove seeds if you want less heat. Coat with olive oil and grill over medium heat until lightly charred and soft. Set aside.
  3. Cook the Patties: Season the patties with salt and pepper. Grill or pan-fry until cooked to your liking, adding a slice of cheese during the last minute so it melts.
  4. Assemble the Sliders: Lightly toast slider buns. Spread some of the remaining dressing on the bottom bun. Add a small handful of dressed greens, followed by the burger patty. Layer with a tomato slice, grilled jalapeño, red onion, and avocado. Top with the upper bun and secure with a toothpick if needed.
  5. Spice it Up: Press the avocado layer into the salad kit toppings (cornbread crumbles and crispy corn) for a smoky, crunchy finish.
  6. Serve: Serve with lime wedges and your favourite iced tea or beverage for a full, satisfying meal.

Street corn, also known as elote, is a culturally significant food in Mexico — largely because of corn’s deep historical roots throughout the country. Modern corn traces back to the indigenous cultivation of maize thousands of years ago. Maize was a staple in Aztec and Mayan diets, used to make many traditional foods we still love today, like tortillas and tamales.
