What’s so Yakisoba About Yakisoba Noodles?
Yakisoba is a Japanese noodle-based dish that’s stir-fried and first rose to prominence in Japan around the 1930s. The soba noodles in Yakisoba are not the traditional Japanese soba noodles made from buckwheat flour, but rather Chinese noodles made from ordinary wheat flour and flavored with a savory, umami-rich sauce that’s quite similar to Worcestershire sauce. Thus, “Yakisoba noodles” are noodles that have been cooked with the typical flavors of the Yakisoba dish. Yakisoba noodles are always excellent on their own, but even better when incorporated into a stir-fry. At least in our opinion.
Let’s all pledge to enjoy Yakisoba more often, starting with this recipe. Enjoy!
