Cashews: What Can’t They Do?
Are you aware of how versatile cashews can be? While they’re obviously great as a snack (and on top of chicken skewers), cashews are multi-talented nuts that can be used in some pretty surprising ways. Here are some easy ways to experiment with cashews in your kitchen:
- Creamy cashew sauce: Blend soaked cashews with water, garlic, and lemon juice to create a smooth, dairy-free sauce. Drizzle it over some pasta, use it as a base for soups, or dress up roasted vegetables for a bit of added richness.
- Homemade cashew butter: This one’s easy. Process cashews in a food processor until they turn into a creamy spread. Enjoy it on toast, mix it into smoothies, or use it as a dip for fruits and vegetables.
- Vegan cheese substitute: Prepare to be pleasantly surprised. Blend cashews with nutritional yeast, lemon juice, and seasonings to create a dairy-free cheese alternative that can take the place of nacho cheese. Spread it on crackers or bagels, use it as a filling for stuffed pasta, or layer it on tortilla chips for vegan nachos.
- Energy bites: Combine cashews with dates, oats, and a touch of honey in a food processor. Blend until almost smooth, then roll the mixture into bite-sized balls for a quick, nutritious snack that’s perfect on the go
