Asian Cashew Chicken Skewers

With its blend of savoy cabbage, green cabbage, carrots, celery, and green onion topped with crispy wontons, toasted almonds, and a light sesame dressing, our Asian Chopped Salad Kit delivers a satisfying combination of familiar Asian-inspired flavors. This recipe provides the perfect protein companion to top off your salad—grilled chicken skewers seasoned with a flavor bomb combination of honey, garlic, cayenne, cilantro, and a nutty, crunchy finish courtesy of chopped cashews. Ingredients

  • 1 package Asian Cashew Chopped Salad
  • 1 chicken breast (about ½ lb)
  • 2 tablespoons of olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon of cayenne pepper
  • 1 tablespoon of honey
  • 2 tablespoons cashews, chopped
  • 2 tablespoons cilantro leaves
  • Wooden Skewers

Directions

  1. Pat dry the chicken breast, drizzle with olive oil, and season with garlic, cayenne pepper, salt and pepper.  Cut the skewers into 1” chunks and put onto wooden skewers.
  2. Place the skewers on the grill over medium-high heat and cook them for 10-15 minutes and flip halfway through.
  3. Drizzle the skewers with the honey, sprinkle with chopped cashews and cilantro.
  4. Assemble the chopped salad kit, and top with the Chicken Skewers.
