High-Protein Cottage Cheese Tacos with Southwest Chicken & Avocado

Have you heard about the whole “150 grams of protein a day” thing that trainers at the gym tell you about? As fresh veggie fans, we weren’t sure it was possible. Then we came across these carb-free tacos with extra protein!

We’ll show you how to make these alternatives to traditional taco shells, which you’ll fill with a Taylor Farms Power Southwest Chopped Salad Kit, chicken breast, and avocado. Bonus: the salad is topped with creamy Southwest Ranch Dressing. Enjoy this twist on a classic, because these tacos do some heavy lifting.

Ingredients

  • 125 mL cottage cheese
  • 1 egg white
  • 30 mL grated Parmesan cheese
  • 125 mL grilled chicken breast, diced
  • ½ avocado, sliced

 

Directions

For the cottage cheese taco shells:

  • Preheat the oven to 200°C. Line a baking sheet with parchment paper.
  • In a blender or mixing bowl, blend the cottage cheese and egg white until smooth.
  • Spoon the mixture into two thin rounds on the parchment, about 13–15 cm wide. Sprinkle the Parmesan evenly over the tops.
  • Bake for 12–15 minutes, until set and lightly golden at the edges.
  • Remove from the oven and let cool slightly. Gently lift and fold each round over a spoon handle or taco rack to form taco shells. Let cool until crisp.

For the salad taco filling:

  • Toss the greens from the Southwest Chopped Salad Kit with the included toppings and dressing.
  • Warm the diced grilled chicken, if desired.
  • Fill each cottage cheese shell with the Southwest salad mixture. Top with grilled chicken and avocado slices.
